The Ukranian Goulash from the Kripalu Cookbook was oh so good. It restored my faith in my ability to make savoury food (I normally think of myself as the cake-maker of the household).
2 cups carrots
3 cups potatoes
1/8 cup butter
1/2 tsp salt
1 tbs parsley
1/2 tsp tarragon
1/4 tsp basil
1/4 tsp pepper
1/4 cup flour
1 cup tomato paste
2 cups water
Steam potatoes and carrots until soft. Melt butter in frying pan. Add spices. Add flour, tomato paste and water to make smooth paste. Add potatoes and carrots. Stir together until hot. Serve.
Now, I was less exact on my measurements and I didn't have tarragon or basil and it was still good. Imagine how lovely it would be if you followed the recipe to the letter :)
